Fishy Fajitas
(Serves 4)
Ingredients:
- 455g coley or cod fillets, fresh or defrosted, skinned and cut into strips
- 1 clove garlic, crushed
- pinch of cayenne pepper
- juice and rind of 1 lime
- 1 tbsp beer or white wine
- 1 tbsp oil
- 3 tbsp hot taco sauce
- 1 onion cut into wedges
- 1 red pepper, deseeded and cut into strips
- 1 green pepper, deseeded and cut into strips
- fresh chopped parsley, to garnish
Method:
- Combine the garlic, cayenne pepper, lime and alcohol. Add the fish and leave to stand for 15 minutes.
- Heat the oil in a wok or large frying pan. Add the onion and peppers and cook for 4-5 minutes or until they start to blacken in colour.
- Add the fish and liquid and cook for 3-4 minutes.
- Served with warm fajitas accompanied by iceberg lettuce, soured cream, guacamole and salsa.
