Fishy Fajitas

(Serves 4)

Ingredients:

Fishy Fajitas
  • 455g coley or cod fillets, fresh or defrosted, skinned and cut into strips
  • 1 clove garlic, crushed
  • pinch of cayenne pepper
  • juice and rind of 1 lime
  • 1 tbsp beer or white wine
  • 1 tbsp oil
  • 3 tbsp hot taco sauce
  • 1 onion cut into wedges
  • 1 red pepper, deseeded and cut into strips
  • 1 green pepper, deseeded and cut into strips
  • fresh chopped parsley, to garnish

Method:

  1. Combine the garlic, cayenne pepper, lime and alcohol. Add the fish and leave to stand for 15 minutes.
  2. Heat the oil in a wok or large frying pan. Add the onion and peppers and cook for 4-5 minutes or until they start to blacken in colour.
  3. Add the fish and liquid and cook for 3-4 minutes.
  4. Served with warm fajitas accompanied by iceberg lettuce, soured cream, guacamole and salsa.
